Cauliflower and Cheddar Soup

I didn't get much done yesterday.
I ran out of steam.
So today, I will continue cleaning and de-cluttering the living room. I will also be maintaining the kitchen and dining room.
My goal is to get the living room done today.

Valentine's Day is coming up.
Pops and I don't really celebrate Valentine's Day. Maybe it's because our Anniversary is just a few weeks later.
I do like to use Valentine's Day to recognize everyone in my life that I love.
It's just a good day to remind you to appreciate everyone, not just your spouse.

Thing One came up to me yesterday, randomly, and said "Mama, I want a Valentine's Day Party."
Okay....? haha I think he saw a Party City commercial.
I told him that of course we could have a Valentine's Day Party.
I think we're going to have it this Sunday, since Pops has work and school Monday.
I'm going to get a lot of balloons, so it should be fun!





I've been in the mood for Broccoli Cheese soup for a couple of days now.
Today while making lunch, I realized that I had some cauliflower.
I decided right then to make a Cauliflower Cheese soup, with whatever I had on hand.

It turned out delicious!
A nice creamy, smooth texture.
A great winter soup.

Ingredients:

  • tablespoon butter or margarine
  • 1 small onion, chopped
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • cup milk
  • 1 cup chicken broth
  • 1/2 head (1-2 pounds) cauliflower, cut into 1-inch chunks
  • 1 teaspoon Dijon mustard
  • 1 cup shredded sharp Cheddar cheese

Directions:
  1. In 4-quart saucepan, melt margarine or butter over medium heat. Add onion and cook until golden, about 10 minutes, stirring occasionally. Stir in flour and salt; cook 2 minutes, stirring frequently.
  2. Gradually stir in milk, chicken broth, and 3/4 cup water; add cauliflower and heat to boiling over high heat. Reduce heat to low; cover and simmer until cauliflower is tender, about 10 minutes.
  3. In blender (with center part of blender cover removed to allow steam to escape), blend cauliflower mixture at low speed in small batches until very smooth.
  4. Return cauliflower mixture to saucepan; heat over medium heat until hot, stirring occasionally. Remove saucepan from heat; stir in mustard and cheese until melted and smooth. Garnish soup with extra cheese to serve. Enjoy!
