Success!

Our Thanksgiving dinner on Sunday, the first one I've ever made, was a huge success! I had been getting tired of eating turkey for the past 4 days, and wanted to do something different with our turkey dinner. I decided to put cayenne pepper inside the turkey. This turned out great! It gave the actual turkey meat a great smokey flavor. I used the juices from the turkey to make gravy, which had a great bite to it, from the cayenne. I was afraid that it was going to be over-powering, but it was the perfect amount for us adults. Thing One ate the turkey just fine, but didn't really care for the gravy. This is something I would definitely do again.

A few recipes were passed on to me this Thanksgiving and so I decided to share some with you. Pops' mom makes a casserole with the Thanksgiving left-overs and he asked her for the recipe so that I could make it. I made it last night while cleaning up from dinner, and this morning I just popped it in the oven. It used up a lot of our leftovers which was nice for me since I don't have a lot of Tupperware. Super easy and super delicious!

Thanksgiving Casserole

Ingredients:
Left over stuffing
Left over mashed potatoes
Left over turkey
Left over gravy

Directions:
Layer stuffing, mashed potatoes, turkey, and gravy in that order. Bake in the oven at 350 degrees for 30 minutes. Enjoy!

There's two more recipes I want to share, both given to me by a good friend of mine who was with us for dinner. One was a delicious wine spritzer. Super simple, yet something I never thought of.

Wine Spritzer

Ingredients:
Red wine
Sparkling juice

Directions:
Pour your wine glass a little more than half way full with wine. Add a splash of sparkling juice. Enjoy!

We used white grape juice at first which was really fantastic. We then tried sparkling cherry juice which wasn't as good. Also, don't use too much of the juice. The first one I made I didn't really feel like drinking too much, so I did half and half, and it was way too sweet. I added a little more wine after taking a sip and it was much better. Very light and not too sweet.

The last recipe I have to share surprisingly passed the 2 year old test! They are really good, and a healthy snack to have on hand. I don't remember what she called these, but I will call them:

Stuffed Celery

Ingredients:

1 bunch celery
1 packet cream cheese
1 packet dry ranch dip mix

milk

Directions:
Mix the cream cheese and ranch dip mix. Add a little milk to make it smooth.
Wash and cut celery into good sized portions.
Spread some of the cream cheese dip inside the celery. Enjoy!
