Breakfast Burritos

3 pounds breakfast sausage (3 rolls) $1.44 each
2 dozen eggs $1.28 per dozen
60 flour tortillas $1.70 per 10
4 cups shredded cheddar cheese $1.17 each pkg (used 2)
= $19.42 or about $.32 each burrito


Brown the sausage, drain fat, and set aside.  Make scrambled eggs.  Mix the sausage and eggs together in a large bowl.  Set up an assembly line:  put about 1/4 cup eggs and sausage on one edge of flour tortilla, sprinkle about 1 tablespoon of shredded cheese and roll up, folding in the sides to create a burrito.
I used 1/3 cup of the egg and sausage mixture and got 35 burritos. Half the burritos were on whole wheat tortillas (for me and Thing One) and the other half were flour tortillas (for Pops).

The burritos did not pass the two year old test (too much tortilla), but the egg mixture and cheese did.

I then wrapped each burrito in the paper, and then placed them in 1 gallon freezer bags and put them out in our freezer. Microwave for 1-2 minutes depending on your microwave. These definatly tasted much better after being frozen, and then microwaved.
